When a user agent client sends INVITE request to another user agent, it will go through proxy server. Just to avoid re-transmission of INVITE message, Proxy sever responds back to User agent client with 100 trying.

It is kind of Provisional acknowledgment from proxy to user agent that it has received the INVITE.
The 100 Trying provides you the feedback that your request is being processed by a SIP proxy.
If 100 trying is not sent and if T1 timer gets expired, UAC will send one more invite in order to avoid that 100 trying is being sent back.

As we know, when a session is established between two user agents i.e. UAC (User Agent Client) and UAS (User Agent Server), known as Dialog in SIP terminology. I read that a SIP user agent client can trigger INVITE message towards user agent server in an already established session. This scenario is known as "re-invite" but I am unable to think the case in which it happens.

Is it mandatory to establish a separate default bearer to exchange IMS signaling messages between UE and IMS network nodes ? Can't internet default bearer be used for the same ?

I know the fact P-CSCF establishes an IP sec tunnel with the UE but exact at which point it does not sure.
